Sourdough Croissant Wrapped Jalapeño Poppers

Ingredients

For the Filling

  • 12 medium jalapeños tops and cores removed
  • 136 g cream cheese softened (about 1/2 cup plus 1 1/2 tablespoons)
  • 48 g sour cream about 3 tablespoons
  • 90 g shredded cheddar cheese a generous 3/4 cup
  • 4 g chopped garlic about 1 teaspoon, or 1 large clove
  • 1.5 g Worcestershire sauce about 1/4 teaspoon
  • 2 g smoked paprika about 1 teaspoon, plus more to taste
  • 20 g cooked crumbled bacon optional (about 2 to 3 tablespoons)

For Assembly

  • 1 batch homemade sourdough croissant dough laminated and ready to shape
  • 1 large egg whisked with 1 tablespoon water, for egg wash

Instructions

  • Slice off the tops and remove the cores from all 12 jalapeños. For a milder popper, scrape out the seeds and white membranes too. Wear gloves while you work.
  • In a bowl, mix together the softened cream cheese, sour cream, shredded cheddar, chopped garlic, Worcestershire sauce, and smoked paprika until smooth. Fold in the crumbled bacon if using.
  • Stuff each jalapeño with the cheese mixture. Wipe any excess off the cut top so the filling sits even with the opening.
  • Roll out your prepared sourdough croissant dough into a rectangle about 10 inches by 12 inches. Cut it into strips about 1 inch wide. Keep the dough cool while you work.
  • Shape a strip of dough into a U around the cut top of a stuffed jalapeño. Press the edges into the center of the opening until they stick together, sealing in the cheese. Wrap the rest of the strip around the pepper, overlapping the edges slightly.
  • Place the wrapped poppers on a baking sheet lined with parchment paper. Cover and let proof for about 6-8 hours, or until the dough looks puffy. It will all depend on your kitchen temperature.
  • If using store bought dough, follow instructions on the packet. Many you can just roll and bake, no proofing needed.
  • Preheat the oven to 400°F. Brush the proofed poppers with the egg wash.
  • Bake for 20 to 25 minutes, until deeply golden brown and flaky.
  • Let the poppers cool for a few minutes before serving, since the filling gets very hot.

Notes

Croissant dough: This recipe uses homemade laminated sourdough croissant dough as the wrapper, which is what gives you those tall, flaky layers. You can get my full step by step method in my classic sourdough croissant recipe at https://payhip.com/b/RblBi. The prep and cook times above do not include the time to make the croissant dough.
You can optionally use store bought dough.
Spice level: For mild poppers, remove all seeds and white membranes and choose smaller, smooth, bright green jalapeños. For more heat, leave some membrane in, stir a pinch of cayenne or a few dashes of hot sauce into the filling, or use serrano peppers.
Make ahead and freezer: You can cold proof the shaped poppers in the fridge overnight instead of proofing on the counter, then finish at room temperature until puffy before baking. To freeze before baking, shape and freeze on a tray until solid, then bag. Thaw, proof, egg wash, and bake as directed. To freeze after baking, cool completely and freeze in an airtight container for up to 3 months.
Storage and reheating: Store leftovers in an airtight container in the fridge for 2 to 3 days. Reheat in a 325°F to 350°F oven for 8 to 10 minutes, or in the air fryer at 350°F for a few minutes. Avoid the microwave, which softens the flaky layers.
Allergen and dietary notes: Contains dairy, egg, and wheat. Bacon adds pork, so leave it out to keep these vegetarian. Wear gloves when handling jalapeños, since the oils can irritate skin and eyes.
