Real Hot Chocolate Recipe (No Powder!)
Equipment
- Option 1: Microwave Method, Microwave safe mug, Whisk or handheld frother

Ingredients
- 10 oz whole milk or milk of choice add more or less as needed
- 1 to 2 oz good quality chocolate chopped dark semisweet or milk, your preference
- 1/8 tsp vanilla extract
- Pinch of flaky sea salt or regular salt
- 1 scoop unflavored collagen powder optional about 10g, for protein boost
- 5-10 g maple syrup (optional, if using a darker chocolate)) 1-2 teaspoons
Optional toppings:
- Whipped cream
- Marshmallows
- Chocolate shavings
Instructions
Method 1: Microwave
- Combine milk, chopped chocolate, vanilla extract, salt, and collagen powder if using in a microwave safe mug.
- Microwave for 1 minute. Stir well.
- Continue microwaving in 30 second intervals, whisking after each, until chocolate is fully melted and mixture reaches your desired temperature.
- Whisk vigorously or use a handheld frother for 15 to 20 seconds to create foam and fully incorporate the chocolate.
- Top with whipped cream, marshmallows, or chocolate shavings if desired. Serve immediately.
Method 2: Stovetop
- Combine milk, chopped chocolate, vanilla extract, salt, and collagen powder if using in a small saucepan.
- Heat over medium low heat, whisking constantly or using a handheld frother periodically until chocolate is fully melted and mixture is hot and silky.
- Do not let it boil. Remove from heat once steaming and smooth.
- Pour into your favorite mug. Top with whipped cream, marshmallows, or chocolate shavings if desired. Serve immediately.
Method 3: Automatic Milk Frother (My Favorite)
- Place chocolate chopped up in a microwave safe bowl. Microwave for 20 seconds, stir, microwave for 20 seconds, stir. Continue until chocolate is melted, maybe one more additional time.
- Combine milk, vanilla extract, salt, and collagen powder if using in the milk frother.

- Select your desired temperature setting. I use the highest setting.
- Select your desired froth level. Medium or high creates silky foam on top.
- Press start and let the frother work its magic.
- Slowly drizzle in your melted chocolate once the milk begins to warm.

- Pour into your favorite mug. The foam will be on top already. Add whipped cream, marshmallows, or chocolate shavings if desired. Serve immediately.

Three Ways to Make Real Hot Chocolate
The beauty of this recipe is its flexibility. Choose the method that works for you:
Method 1: Microwave (Quickest)
Perfect for single servings when you want hot chocolate now. Combine everything in a microwave-safe mug, microwave for 1 minute, stir, then continue in 30-second intervals, stirring after each, until your chocolate is melted and everything is heated to your desired temperature. Whisk vigorously or use a handheld frother to combine.
Method 2: Stovetop (Traditional)
Combine everything in a small saucepan over medium-low heat. Whisk constantly (or use a handheld frother periodically) until the chocolate melts and the mixture is hot and silky. This gives you the most control over temperature and texture.
Method 3: Automatic Milk Frother (My Favorite)
This is how I make it every single time. Combine everything in the milk frother, select your temperature setting (I use the highest), choose your froth level (medium or high for that silky foam), and press start. Walk away. Come back to perfect hot chocolate with a gorgeous foam top.

Choosing Your Chocolate
The most important rule: use chocolate you’d actually want to eat.
This isn’t the time for that random chocolate bar that’s been sitting in your pantry since 2019. The chocolate is the flavor here, so make it count.
What works:
- Dark chocolate (60 to 75%) – Rich, intense, sophisticated. My go-to.
- Semisweet chocolate – Balanced sweetness, classic hot chocolate vibes
- Milk chocolate – Sweeter, creamier, loved by everyone
- High-quality chocolate bars – Alter Eco, Equal Exchange, Theo Chocolate, Endangered Species Chocolate, Green & Black’s Organic, Guittard
What won’t work as well:
- Chocolate chips (they contain stabilizers that prevent smooth melting)
- Chocolate melts or candy melts (waxy texture, artificial flavor)
- Anything you wouldn’t eat straight
If you’re using a darker chocolate (70% or higher), you might want to add a tiny bit more sweetness. If you’re using milk chocolate, you probably don’t need any additional sugar at all.
Post-Work Recovery Hot Chocolate
Here’s where this recipe gets interesting: I add unflavored collagen powder to mine and my kids every single time.
