Notes

Chocolate Quality Matters
Use chocolate you would actually want to eat on its own. The chocolate IS the flavor here, so quality makes a massive difference. Good options include dark chocolate 60 to 75 percent, semisweet chocolate, milk chocolate, or high quality chocolate bars. In a pinch chocolate chips will work.
Temperature Control
Do not let the milk boil or the chocolate will seize and become grainy. Heat until steaming hot but not boiling. For stovetop method, remove from heat as soon as you see steam and the mixture is smooth.
Sweetness Adjustments
If using darker chocolate 70 percent or higher, you may want to add sweetness. I recommend adding 1 to 2 teaspoons of pure maple syrup instead of granulated sugar for a smoother, more natural sweetness. If using milk chocolate, you probably will not need any additional sweetener at all.
Collagen Powder
Use unflavored collagen powder that dissolves completely in hot liquid. I use a multi source collagen powder. It adds protein for post workout recovery and is perfect for both adults and kids. You cannot taste it at all. Great after shoveling snow, playing outside, or any winter activity.
Milk Options
Whole milk creates the creamiest result. You can substitute with 2 percent milk, skim milk, oat milk, or almond milk. Note that lower fat milks will produce a thinner consistency. For best frothing with non dairy milk, use barista blend.
Reheating
This drink is best consumed immediately while fresh and frothy. If you must reheat, do so gently on the stovetop or in 15 second microwave bursts, stirring between each. The texture will not be quite as silky when reheated.
Scaling
This recipe easily scales up. Simply multiply all ingredients by the number of servings you need.

Three Ways to Make Real Hot Chocolate

The beauty of this recipe is its flexibility. Choose the method that works for you:

Method 1: Microwave (Quickest)

Perfect for single servings when you want hot chocolate now. Combine everything in a microwave-safe mug, microwave for 1 minute, stir, then continue in 30-second intervals, stirring after each, until your chocolate is melted and everything is heated to your desired temperature. Whisk vigorously or use a handheld frother to combine.

Method 2: Stovetop (Traditional)

Combine everything in a small saucepan over medium-low heat. Whisk constantly (or use a handheld frother periodically) until the chocolate melts and the mixture is hot and silky. This gives you the most control over temperature and texture.

Method 3: Automatic Milk Frother (My Favorite)

This is how I make it every single time. Combine everything in the milk frother, select your temperature setting (I use the highest), choose your froth level (medium or high for that silky foam), and press start. Walk away. Come back to perfect hot chocolate with a gorgeous foam top.

Choosing Your Chocolate

The most important rule: use chocolate you’d actually want to eat.

This isn’t the time for that random chocolate bar that’s been sitting in your pantry since 2019. The chocolate is the flavor here, so make it count.

What works:

  • Dark chocolate (60 to 75%) – Rich, intense, sophisticated. My go-to.
  • Semisweet chocolate – Balanced sweetness, classic hot chocolate vibes
  • Milk chocolate – Sweeter, creamier, loved by everyone
  • High-quality chocolate bars – Alter Eco, Equal Exchange, Theo Chocolate, Endangered Species Chocolate, Green & Black’s Organic, Guittard

What won’t work as well:

  • Chocolate chips (they contain stabilizers that prevent smooth melting)
  • Chocolate melts or candy melts (waxy texture, artificial flavor)
  • Anything you wouldn’t eat straight

If you’re using a darker chocolate (70% or higher), you might want to add a tiny bit more sweetness. If you’re using milk chocolate, you probably don’t need any additional sugar at all.

Post-Work Recovery Hot Chocolate

Here’s where this recipe gets interesting: I add unflavored collagen powder to mine and my kids every single time.

Collagen provides protein that helps repair muscles after a workout, making this hot chocolate the perfect recovery drink after:

  • Shoveling snow
  • Playing outside with the kids
  • A morning run
  • Any kind of winter outdoor activity

The collagen dissolves completely in the hot liquid, so you get all the benefits without any gritty texture or weird flavor. Just creamy, rich hot chocolate that happens to give your muscles a little extra support.

It’s optional, but if you’re already making yourself hot chocolate after being out in the cold, why not make it work a little harder for you? And yes, I make this for my kids with the collagen too. They can’t taste it, and kids need that protein boost just as much as adults do.

The Tool That Changed Everything

I’m going to be honest: the automatic milk frother is a bit of an investment. But I’ve used mine almost every day for two years without a single issue, and it’s become one of the most-used tools in my kitchen.

What I use it for:

  • Hot chocolate (obviously)
  • Steamers for the kids
  • Heating bone broth
  • Warming milk for bedtime
  • Making tea
  • Heating any liquid, really

It has three temperature settings and three froth settings (low, medium, or high). The high froth creates this gorgeous, silky foam on top that makes your hot chocolate feel like it came from a fancy café.

If you have a liquid you want heated and frothed, this is your tool. It heats to the perfect temperature every time, creates that professional foam texture, and you don’t have to stand there whisking.

Worth every penny.

Don’t have one? No problem. The microwave method or stovetop method with a handheld frother works beautifully too. I’ll link my favorite handheld frother as well, which is much more budget-friendly and still gives you great results.

Variations & Substitutions

Milk options:

  • Whole milk (my preference for creaminess)
  • 2% or skim milk (lighter but still works)
  • Oat milk (creamy, slightly sweet)
  • Almond milk (thinner texture, use barista blend for better frothing)

Flavor additions:

  • Peppermint extract (1/8 tsp) for a minty twist
  • Cinnamon (pinch) for warmth
  • Espresso powder (1/2 tsp) for a mocha vibe
  • Orange zest for sophisticated depth

Toppings:

  • Whipped cream
  • Marshmallows
  • Chocolate shavings
  • Cocoa powder dusting
  • Caramel drizzle

Storage & Reheating

Can I make this ahead?
Not really. This is a 2-minute drink. Just make it fresh when you want it.

Can I reheat it?
You can, but the texture won’t be quite as silky. If you must reheat, do it gently on the stovetop or in 15-second microwave bursts, stirring between each.

How long does it last?
This is meant to be consumed immediately. The magic is in the fresh froth and that first sip.

FAQ

Do I have to use whole milk?
No, but it creates the creamiest result. You can use any milk you prefer. Just know that lower-fat options will be thinner.

Can I use cocoa powder instead of chocolate?
You could, but then it’s not this recipe anymore. The whole point is using real melted chocolate for that silky, luxurious texture.

What if I don’t have a frother or whisk?
For the microwave method, just stir really well with a spoon. It won’t be quite as frothy, but it’ll still be delicious.

Is the automatic milk frother worth it?
If you drink hot chocolate, lattes, steamers, or heat liquids regularly, absolutely. I’ve used mine almost daily for two years. But the recipe works great with the other methods too.

How much collagen should I add?
I use one scoop (about 10g) of unflavored collagen powder. It dissolves completely and doesn’t affect the taste.

Can I make this dairy-free?
Yes! Use oat milk or almond milk (barista blend froths better) and dairy-free chocolate.

Recipe Notes

  • Use chocolate you’d want to eat on its own
  • Don’t let the milk boil. Just heat until steaming
  • The frother does all the work. Let it run its full cycle
  • Drink it immediately for the best texture
  • Quality salt matters. Use flaky sea salt if you have it
  • Collagen is tasteless. Add it for everyone, including kids
