Sourdough Crookie Bites

These delicious Crookie Bites combine the buttery flakiness of croissants with the sweet, gooey goodness of chocolate chip cookies. Make a few using the extras from trimming your doughs or create a large batch by making each recipe specifically for the Crookie Bites. The perfect treat just large enough for a few bites of bliss. I bet you can’t have just one!

What You’ll Need

  • Prepared croissant dough (laminated, but not yet shaped)
  • Prepared chocolate chip cookie dough
  • Granulated sugar for sprinkling
  • Parchment paper
  • Muffin tin
  • Rolling pin

This is a chocolate chip cookie recipe that doesn’t use browned butter

Instructions

  1. Prepare your doughs. Start with your favorite croissant dough that’s been laminated but not yet rolled into croissants. If using the attached croissant recipe, follow it up to the point before shaping. Similarly, prepare your chocolate chip cookie dough according to the attached recipe.
  2. Cut the croissant dough. Roll out your laminated croissant dough and cut it into approximately 1/2-inch sections.
  3. Prepare the cookie dough. Roll out your prepared cookie dough until it’s approximately 1/2-inch thick. Cut it into strips and then into 1/2-inch sections.
  4. Combine the doughs. In a bowl, gently toss together the croissant dough sections and cookie dough pieces, allowing them to mix but not fully combine.
  5. Fill the muffin tin. Line a muffin tin with parchment paper squares. Fill each cup with the dough mixture, being careful not to pack it too tightly.
  6. Add a sweet touch. Sprinkle each Crookie Bite with a little granulated sugar on top.
  7. Let them rise. Allow the Crookie Bites to proof at room temperature, covered, until they’ve almost doubled in size.
  8. Bake to perfection. Preheat your oven to 375°F (190°C). Bake for approximately 20-25 minutes, or until the croissant portions are golden brown and flaky.
  9. Cool slightly. Allow the Crookie Bites to cool in the tin for about 5 minutes before transferring to a cooling rack.

Tips for Success

  • Don’t overwork the doughs when mixing them together – you want distinct sections of each for that beautiful marbled effect.
  • Make sure both doughs are properly chilled before cutting and mixing.
  • The parchment paper liners make removal easy and help achieve those beautiful rustic edges.
  • These are best enjoyed warm, when the chocolate chips are still slightly melty!

Pair these Crookie Bites with your favorite coffee or a cold glass of milk for the ultimate treat experience. Store any leftovers in an airtight container for up to 2 days, or freeze for longer storage.

Note: For best results, use the attached croissant and chocolate chip cookie recipes. Prep time doesn’t include the time to make the separate doughs.
