Create the Pumpkin Shape

After 24 hours, remove the banneton from the refrigerator. Now it’s time to create the pumpkin segments!

While the dough is still in the banneton, lay pieces of baker’s twine across the dough in a pattern:

  • First piece of twine across the middle
  • Second piece slightly off-center, perpendicular to the first
  • Third piece slightly off-center on the other side, creating 6-8 segments total

Carefully invert the banneton onto a piece of parchment paper so the dough releases with the twine underneath. Bring up the ends of each piece of twine and tie them together at the intersections on top of the loaf, creating your pumpkin shape.

Now take strips of parchment paper and carefully slide them under each piece of twine. The parchment paper prevents the twine from sticking to and cutting into the dough as it bakes—this technique is essential!

Step 9: Score the Dough

Using a sharp knife or lame, score leaf designs between the twine segments for an authentic pumpkin look. These decorative scores will open beautifully during baking.

Step 10: Bake the Pumpkin Bread

  7. Carve a jagged, toothy smile using both the serrated knife and lame for precision
  8. Place your butter candle inside the hollowed-out bread jack-o’-lantern
