This is the recipe that started everything.
I had a bowl of egg yolks in the fridge, a craving, and one more twelve dollar container of grocery store ice cream that listed things on the back I could not pronounce. So I bought an ice cream maker and set out to make one really good vanilla. Not the pale, icy, faintly sweet kind. A deep, custardy, fleck of real vanilla bean in every bite kind.
Once I got this base right, every other flavor I make now is built on it. My homemade chocolate ice cream, mint chip, coconut, all of them start here. So if you make one ice cream from scratch this summer, make it this one, and then you will understand why I cannot stop.
There is also one tablespoon of a surprise ingredient in here, and it is the reason this scoops like a dream instead of freezing into a block you have to chip at. But it’s optional!

Why a Custard Base

Vanilla is where a custard base earns its keep, because there is nowhere to hide. No cocoa, no mix ins, no chocolate shards pulling focus. Just cream, vanilla, and egg yolks, so every part of the technique shows up in the finished scoop.
A custard base, sometimes called French style, is built by cooking egg yolks into the warm dairy until it thickens. The yolks are not there for richness alone. The lecithin in them emulsifies the fat and water so they stay bound together, and the proteins set into a soft gel that keeps ice crystals small. Small crystals are what your tongue reads as smooth. That is the whole difference between homemade that tastes like a scoop shop and homemade that tastes like frozen milk.
The other half is real vanilla bean. Those tiny black flecks are the seeds scraped from a whole pod, steeped into the hot cream so the flavor lives all the way through the base rather than sitting on top. You can taste the difference between this and extract alone, and you can see it, which is half the reason a good vanilla bean ice cream looks so good in the bowl.

This is the machine I use and the one I went looking for on purpose. It has a built in compressor, which means there is no bowl to pre freeze. That was the whole reason I chose it. Every other model I looked at wanted me to keep a giant frozen bowl living in my freezer at all times, then wait a full day before I could churn. With a compressor machine you make your base, chill it, and churn whenever you are ready, and you can run batches back to back. If you plan to make ice cream more than a couple of times a year, that freedom is worth the cost.
Not optional for a custard base. You are cooking to a specific window, and the gap between silky custard and sweet scrambled eggs is only about ten degrees.
Cheap insurance. Straining the cooked custard catches any set bits of egg before they reach the machine, which is the difference between smooth and grainy.

The Secret Ingredient Is Vodka

One tablespoon of vodka, whisked into the cold base right before it goes into the machine. I know how that reads. Stay with me, it is chemistry.
Alcohol does not freeze at freezer temperatures. When you stir a small amount into an ice cream base, it lowers the freezing point of the whole mixture, so at your freezer’s actual temperature slightly less of the base has frozen solid. That does two good things at once. It keeps the ice cream soft enough to scoop straight from the freezer instead of setting into a brick, and because less water is locking into ice, the crystals that do form stay smaller, which is exactly what gives you a silky texture instead of a grainy one.
A few things worth knowing:
Use a vodka you would actually drink. There is no heat to cook off harshness, so cheap vodka tastes like cheap vodka. I use a flavored one because a little extra vanilla suits this base, but plain works perfectly.
One tablespoon is the ceiling. More alcohol lowers the freezing point too far and the base will not set up in the machine. It will churn and churn and stay soupy.
You will not taste it. At this ratio the vodka is doing chemistry, not flavor.
It is optional. Leave it out and you still get lovely ice cream. It will just freeze firmer and want a few minutes on the counter before you can scoop. Since the vodka is stirred into a cold base and never heated, it does not cook off, so skip it if you are serving this to children or anyone avoiding alcohol, and plan on the counter time instead.
How to Whisk In the Vodka So It Stays Smooth
This is the part I learned the hard way, so you do not have to.
Whisk the vodka into the cold base by hand until it is fully dispersed, then pour the base into the machine. Do not add the vodka to the machine while it is already churning.
Here is why it matters. Alcohol is very good at crashing proteins out of solution. If you pour a tablespoon of vodka straight into the running machine, it lands as a concentrated pocket on cold cream before the paddle can spread it, and that pocket can seize the cream proteins into tiny firm bits. They freeze hard, and then, over the next day in the freezer, the alcohol evens out through the base and those bits slowly soften and dissolve. The result is a batch that tastes faintly grainy with little hard flecks at first and smooths out a day later. Whisking the vodka evenly into the cold base first means it never hits the cream at full strength anywhere, and the graininess never happens. It’s still good ice cream but if you eat it right away you may notice it.
If you want to be extra careful, whisk the tablespoon of vodka into a small ladle of the base first, then stir that back into the whole. Same result, zero chance of a hot spot.
Why the Ice Bath Matters
This is the step people skip, and it is the one I would defend hardest.
Fill a large bowl with ice and a splash of cold water. Nest a second, smaller bowl inside it so the bottom sits in the ice water. Pour your hot strained custard into that inner bowl and stir every few minutes until it stops steaming and comes down to about room temperature. Then cover it and move it to the refrigerator for a full overnight chill.
Three reasons it is not optional.
It stops the cooking. A custard pulled at temperature keeps climbing for a minute or two from the heat still in the pan. Getting it into a cold bowl fast is what keeps it from tipping into scrambled.
It protects your food safety. A hot custard cooling slowly on the counter, or worse going into the fridge as a hot mass, sits too long in the range where bacteria multiply. The ice bath gets you through that range in minutes, and it keeps a hot bowl from warming everything else in your refrigerator.
It sets up a better freeze. A base that goes into the machine truly cold churns faster, and faster churning means less time for crystals to grow large. The overnight rest also lets the fat firm up and the proteins fully hydrate, which is why an overnight base churns thicker and smoother than one you rushed after a few hours.
Tips for the Smoothest Vanilla

Chill the container you store it in. Put it in the freezer while the ice cream churns. Soft ice cream hitting a room temperature container melts at the edges, then refreezes into crystals.
Press parchment to the surface. Directly on the ice cream, not just the lid on top. That is what prevents freezer burn and the gritty layer that forms as surface moisture evaporates and refreezes.
Cook low, and pull at temperature. Medium low means low. Stir constantly, drag the spatula across the bottom of the pan, and pull the custard at 170 to 175F. Overcooked custard reads eggier and can throw tiny set bits, so the thermometer is your friend.
Strain, always. Even a perfectly cooked custard can carry a few set specks. Thirty seconds through a fine mesh sieve is the cheapest smoothness you will ever buy.
Do not overchurn. When it mounds on the paddle and looks like soft serve, it is done. Running longer past that point starts breaking down the air you just worked in.
Let it harden before serving. Straight from the machine it is soft serve. A few hours in the freezer gives you scoopable, and overnight is better.
How to Store Homemade Ice Cream

Homemade ice cream is best within the first two weeks. It stays safe well past that, but with no commercial stabilizers the texture slowly coarsens as crystals grow.
Keep it in the back of the freezer, never in the door. The door is the warmest spot and it swings through a temperature change every time someone opens it, and every little thaw and refreeze grows the crystals.
If it firms up more than you like, a few minutes on the counter softens it. With the vodka in it, you may not need even that.

Why is my ice cream grainy or full of little hard bits?
Usually one of two things. Either the custard threw tiny set bits during cooking, which a fine mesh strainer catches, or the vodka went into the running machine as a concentrated pocket and seized some of the cream proteins. Can I use vanilla extract instead of a whole bean?
Yes. Use about a tablespoon of good extract stirred into the strained base in place of the bean. You lose the flecks and a little depth, but it is still excellent. And if you make your own vanilla extract it’s a win win! You can replace the extract and vanilla in one go! Just bump it up to 1 Tablespoon and 1 Teaspoon.
Can I use a different alcohol instead of vodka?
Yes. Any 70-80 proof spirit works at the same one tablespoon, so rum, bourbon, brandy, or tequila all do the job. The difference is flavor. Vodka is neutral and disappears into the base, while something like bourbon or dark rum brings a little of its own character, which is lovely in the right batch.
Skip liqueurs like Kahlua or Baileys. They are lower proof, so you would need more to get the same effect, and the extra sugar they carry can keep the base from setting up properly in the machine. Whatever you use, one tablespoon is still the ceiling.
Why did my ice cream taste eggy?
Usually too many yolks or a custard cooked too hot. This recipe is dialed to keep the custard note in check, so follow the yolk count as written and pull the custard at 170 to 175F rather than letting it climb.
Can I cut the cream to make it lighter?
Do not go below whole milk on the milk portion, since the fat is doing structural work and a leaner base freezes icier. You have a little room to trade some cream for milk, but past a point you lose the creamy body that makes this worth making.
Is it safe to eat given the eggs?
The eggs are not raw. The custard is cooked to a temperature that pasteurizes them, which is one more reason the thermometer matters.
How long does it take start to finish?
Plan on two days. About thirty minutes of active work, then the overnight chill, then churning, then a few hours of hardening in the freezer.
No Ice Cream Maker? Make It No Churn
No machine, no problem. You will not get quite the same airy churned texture, but you can make a genuinely good version by hand, and a few small things make the difference between smooth and icy.
Pour the chilled base into a shallow metal pan and freeze it, stirring hard with a fork every thirty minutes for the first three hours to break up the crystals as they form. Here is how to get it as smooth as possible.
Use a shallow metal pan, and chill it first. Metal conducts cold far better than glass or ceramic, and a wide shallow layer freezes fast and evenly instead of trapping a soft, icy middle. Put the pan in the freezer before you start so the base begins firming the moment it goes in, which keeps the ice crystals small.
Do not skip the early stirs. The first three hours are when crystals form fastest, so the stir every thirty minutes matters most up front. Once the base is mostly firm, the stirring does very little.
Use an electric hand mixer if you have one. Beating the half frozen base at each interval breaks the crystals finer and drags in a little air, which is the closest you will get to real churned texture. A fork works, it just will not get as smooth.
The vodka earns its keep even more here. With no churning to work in air, a no churn base freezes denser and harder, so that one tablespoon lowering the freezing point does even more to keep it scoopable than it does in the machine version.
The finished texture will be denser and closer to a semifreddo than true ice cream, but the flavor is every bit as good.

Homemade Vanilla Bean Ice Cream

Ingredients
- 400 g heavy cream 1 2/3 cups
- 320 g whole milk 1 1/3 cups
- 120 g granulated sugar 1/2 cup plus 1.5 tablespoons, divided
- 5 large egg yolks
- 1 vanilla bean split and scraped
- 1/4 teaspoon fine salt
- 1 teaspoon vanilla extract
- 1 tablespoon vodka plain or vanilla (optional)
Instructions
- Set up an ice bath. Fill a large bowl with ice and a splash of cold water, then nest a smaller clean bowl inside it.
- In a medium saucepan, combine the cream, milk, salt, half the sugar, and both the seeds and scraped pod of the vanilla bean. Heat over medium low until steaming and barely bubbling at the edges. Pull off the heat and steep 20 minutes.
- In a separate bowl, whisk the egg yolks with the remaining sugar until pale and slightly thickened.
- Temper the yolks. Rewarm the dairy if it has cooled, then ladle about one cup into the yolks in a slow steady stream while whisking constantly. Once combined, pour the yolk mixture back into the saucepan.
- Return the pan to medium low heat. Stir constantly with a rubber spatula, dragging it across the bottom of the pan, until the custard reaches 170 to 175 degrees Fahrenheit. Do not let it boil.
- Pour the custard through a fine mesh strainer into a clean bowl. Stir in the vanilla extract.
- Pour the strained custard into the inner bowl and stir every few minutes until it stops steaming and cools to about room temperature.
- Cover the custard and refrigerate at least 8 hours or overnight, until fully cold.
- If using the vodka, whisk it into the cold base by hand until fully dispersed. Do not pour it into the running machine. Pour the base into the ice cream maker and churn 40 to 60 minutes, until it thickens to soft serve consistency and mounds on the paddle.
- Transfer to a chilled shallow container. Press a piece of parchment directly against the surface of the ice cream, cover with the lid, and freeze at least 4 hours or until scoopable.
